Creative Cooking

In the same vein as my friend Kara Jo, I have been trying to be wise with our money and plan our meals ahead of time. (Thankfully, Shirley Jean is easy to please, as you can tell by the photo.) I've been praying that God would help me be creative and thrifty. He has honored my prayer requests...and we've eaten some pretty weird things lately, that all turned out delicious.
Tonight? Grilled chicken breasts and caesar salad along with stale hamburger buns grilled with EVOO and garlic salt. (I know, right?!) Not that weird, I know, but it gets better.
Last week? Homemade hasbrowns: two Russett potatoes, one sweet potato, one parsnip (again, I KNOW!!), grated and fried with sausage and eggs.
The next night? Stromboli made from packaged pizza dough, salami and cheese.
I know none of this proves I'm a genius or even a fantastic cook, but it's a small victory for me as a new SAHM.

Parsnips remind me of my Grammie. She used to fry them in butter--not so healthy, but extremely yummer.

Just don't eat the Russet-eyes...
There's an additional title you have now, too; 'S.H.E.' Sidetracked Home Executive.

wow! nice job piecing the food puzzle together. i feel a little inspired, i must say! it's a job i don't exactly love - figuring out what's for dinner. i may have to try out some of these!

It takes alot of practice, doesn't it??? I am finally getting comfortable with planning and preparing meals--after almost 5 years of marriage. Naomi is the best at this--we should get her to write us a cookbook on "Quick Meals for Moms with Whatever You Have Left in the Cupboard."

You are doing a great job, Erin!

Congratulations on some fine offerings on the table. Be sure to ask G-ma Jean about some of her finest moments. One time she thawed what she thought was chicken, turns out it was only the backs. Same meal, she was going to make instant mashed potatoes, didn't have enough to go with the milk and water she'd already heated. We had chicken backs and runny mashed potatoes. That's a meal I'll never forget!

You go, girl! I am not all that creative, it has to be fast and easy for me. I do casseroles, taco salads, easy stuff like that.

When Anna was a little baby we did a lot of casseroles/hot dishes. She was usually in a good mood in the morning so I'd fry up some hamburger mix all the ingrediants and stick the 9x13 in the fridge til supper time. I'm not all that good at throwing "whatever" together so I'm very impressed w/ your skills. Nice work. It all sounded good to me.
